Mexican Restaurant Recipes: More Than Beans and Tortillas Now
By Sarah Sandori Have you noticed that Mexican restaurants are branching out in their menu offerings? I have. I remember a newspaper cartoon from years ago in which the main character ruminates, somewhat forlornly, on the fact that Mexican restaurants had dozens and dozens of dishes, but they were all just variations on beans and tortillas. Today that’s not the case. Oh, sure, you can count on finding your standard offerings of enchiladas, burritos and tamales at any Mexican restaurant you drop into anywhere in the country. I’ve had an enchilada in Alaska that was indistinguishable from one I might get in Texas, Florida or North Carolina. But lately I’ve noticed some unusual dishes creeping onto the menus of my local Mexican restaurants: Chicken baked in banana leaves, a specialty from the Yucatan peninsula. Hearty beef stews containing nary a single bean (although they do often come with strips of tortilla floating in them). Even cactus, cooked or chopped for salads. I think what is happening is three things. One, Americans are becoming more cosmopolitan in their food tastes and are more willing now to try new and exotic dishes. Two, the explosion in the sheer number of restaurants means that these businesses must constantly tempt us with new food experiences in order to keep our business. Three, the influx of people from Mexico into many areas of the U.S. means that restaurants have a ready-made clientele for more traditional dishes that heretofore were absent from menus geared strictly to American tastes. As a Mexican food aficiando, I welcome this trend. It means more new dishes to sample as well as to try to duplicate at home. Yum!
